Vegetable Gums (415) BASIC RECIPE Wet Ingredients
* 2 eggs (size 6)
* 190ml milk (3/4 cup)
* 1/2 cup vegetable oil
* 1 Tsp Cider Vinegar or Lemon Juice Method:
1) In a small bowl whisk the eggs and oil together
2) Add milk and cider vinegar or lemon juice to combine
3) In a large bowl place 400g of muffin mix
4) Add fresh or frozen berries or fruit of your choice
5) Pour wet mix into large bowl and combine with dry ingredients. Mix by hand. Do not overmix.
6) Spoon into well greased muffin tray and/or muffin cases to 3/4 full.
7) Bake in preheated oven at 160deg C for 20-24 minutes or until skewer inserted comes out clean.
